You will need:
Whisk, hand blender
Ingredients for the coconut milk rice
For 4 servings, 1 serving = approx. 250 g (8 g of sugar)
800 ml coconut drink
120 g round-grain rice
30 g sugar
2 tbsp grated coconut
1 mango, very ripe

If this recipe is not sweet enough for you, feel free to add more sugar. Just remember to track the amount. If this recipe is too sweet for you, you can of course reduce or skip the amount.
Preparation
Step 1:
Put 120 g of rice, 30 g of sugar and 2 tbsp of grated coconut in a pot.

Step 2:
Add 800 ml of coconut drink.
Cover the pot with a lid and leave to thicken on the lowest setting for 30 to 40 minutes. Stir regularly!

Step 3:
Peel the mango, remove from the stone and cut into small pieces.

Step 4:
Place the mango pieces in a tall container and mix until smooth.

Step 5:
For 1 portion, pour 200 g of the rice pudding into bowls, top with 50 g of mango puree and enjoy.
