You will need
Springform pan (approximately 17 cm), baking paper, high measuring cup, food blender or food processor, 2 mixing bowls, hand mixer with dough hook attachments, beaters, pot, whisk
Ingredients for the strawberry cheesecake
For 12 servings, 1 serving = 1 piece of cake (6 g of sugar)
For the cake base:
30 g apricots, dried
Water
50 g butter + a little for greasing the pan
5 g sugar
1 egg
150 g wheat flour, type 405 + a little for the pan
For the cheesecake mixture:
75 g butter
70 g sugar
2 eggs
300 g low-fat curd
120 g cream cheese
2 vanilla beans
40 g starch
For the garniture
400 g strawberries
½ packet red cake glaze
10 g sugar
125 ml water

If this recipe is not sweet enough for you, feel free to add more sugar. Just remember to track the amount. If this recipe is too sweet for you, you can of course reduce or skip the amount.
Preparation
Step 1:
Line the bottom of a springform pan (approximately 17 cm) with baking paper. Grease the sides with a bit of butter and dust with some flour.
Preheat the oven to 180°C.
Place 30 g of dried apricots in a bowl or measuring cup. Cover with hot water and let steep for 15 minutes.

Step 2:
Drain the apricot water and reserve it. Puree the apricots and add enough reserved apricot water to achieve the consistency of plum jam. Place the finished apricot puree in the refrigerator to cool.

Step 3:
In a bowl, combine 50 g of butter, 5 g of sugar, the apricot puree, 1 egg, and 150 g of flour. Use the dough hooks of a hand mixer to blend into a smooth dough.

Step 4:
Place the dough into the springform pan and use your hands to spread it evenly across the bottom.
Pre-bake the crust in the preheated oven at 180°C for 20 minutes.

Step 5:
In a bowl, mix 75 g of butter, 70 g of sugar, 2 eggs, 300 g of low-fat curd, 120 g of cream cheese, the seeds from 2 vanilla beans, and 40 g of starch using the beaters of a hand mixer.

Step 6:
Pour the cheesecake mixture over the crust in the springform pan and smooth the top. Bake in the preheated oven at 180°C for about 50 minutes. The cake is done when the surface turns golden brown.
Allow the cake to cool in the pan.

Step 7:
Wash 400 g of strawberries, remove the stems, and quarter them. Spread the strawberries over the cooled cake.

Step 8:
In a pot, prepare ½ packet of cake glaze with 10 g of sugar and 125 ml of water using a whisk, according to the package instructions. Spoon the glaze evenly over the strawberries.
Allow the glaze to cool. Remove the springform pan and cut the strawberry cheesecake into 12 slices.
