You will need
Food blender or food processor, measuring cup, baking tray, baking paper, pot, whisk, pastry brush
Ingredients for the raisin swirls
For 12 servings, 1 serving = 1 swirl (6 g of sugar)
40 g dates
Water
15 g butter
100 g ground almonds
18 g powdered sugar
275 g puff pastry (without flavor)
90 g raisins
50 g powdered sugar
3 tsp lemon juice
If this recipe is not sweet enough for you, feel free to add more sugar. Just remember to track the amount of sugar. If this recipe is too sweet for you, you can of course reduce or skip the sugar.
For an especially creamy date purée, soak the dates overnight.
Preparation
Step 1:
To make the date purée, place 40 g of dates in a bowl and cover with cold water. Refrigerate overnight.
Pour boiling water over 40 g of dates and let them sit for 20 min.
Step 2:
Drain the dates and reserve the water. Puree the dates, adding enough of the date water to achieve the consistency of plum jam. Set the date purée aside.
Do not pour out the date water. It will be needed later.
Step 3:
Line a baking tray with baking paper. Preheat the oven to 200 degrees.
In a pot, heat the date purée, 15 g of butter, 100 g of ground almonds, 18 g of powdered sugar, and 5 tbsp of date water. Whisk until well combined.
Step 4:
Roll out the puff pastry and spread the date cream evenly over it. Sprinkle 90 g of raisins evenly over the cream.
Step 5:
Roll up the puff pastry from the short side and cut it into 12 evenly sized slices. Place the rolls on a baking tray.
Step 6:
Bake the raisin rolls at 200 degrees for about 15 min, until golden brown.
Step 7:
Mix 50 g of powdered sugar with 3 tsp of lemon juice and brush evenly over the warm raisin rolls.
The raisin rolls are best enjoyed warm.
