You will need:
baking tray, baking paper
Ingredients for coconut bars
For 32 servings, 1 serving = 1 bar (5 g of sugar)
100 ml cream
100 g butter
100 g sugar
250 g grated coconut
1 pinch of salt
For the chocolate coating:
150 g dark chocolate (min. 70% cocoa)
1 tbsp coconut oil
Preparation
Step 1:
Place 100 ml of cream with 100 g of sugar and 100 g of butter in a small pot and heat over medium heat, stirring constantly, until the sugar dissolves. Take care not to let the mixture boil!
Step 2:
Remove the mixture from the heat and fold in 250 g of grated coconut and 1 pinch of salt.
Step 3:
Put the mixture on a baking paper and press it into a rectangle about 2 cm high, let it cool a bit and freeze it for 60 minutes.
Step 4:
Use a large knife to cut bars about the size of your thumb. Spread the bars apart a little so that they don’t stick together.
Step 5:
Coarsely chop 150 g of dark chocolate and melt it over a water bath together with 1 tbsp coconut oil.
Step 6:
Cover the frozen bars with the chocolate and then freeze for at least 2 hours.
Tip: Before serving, let the coconut bars defrost for about 10 minutes at room temperature.
