Ingredients for the barbecue marinade
For 6 servings (approximately 300 g), 1 serving = 50 g (1 g of sugar)
2 cloves garlic
10 capers
1 organic lemon
100 g olive oil
1 tsp sambal oelek
80 g tomato paste
100 ml water
1½ tsp dried rosemary
1½ tsp dried thyme
1½ tsp sweet paprika
1 tsp salt
1 tsp sugar
¼ tsp black pepper
For serving
2 chicken breast fillets
Preparation
Step 1:
Chop 2 cloves of garlic with a knife and finely grate the zest of 1 lemon.
Step 2:
Place the chopped garlic cloves, 10 capers, 1 tsp of lemon zest, 100 g of olive oil, 1 tsp of sambal oelek, 80 g of tomato paste, 100 ml of water, 1½ tsp of dried rosemary, 1½ tsp of dried thyme, 1½ tsp of sweet paprika, 1 tsp of salt, and ¼ tsp of black pepper into a tall container and blend with an hand blender until smooth.
Step 3:
Wash 2 chicken breast fillets, cut them into bite-sized pieces, thread them onto skewers, and brush them on all sides with the marinade. Let them marinate in the refrigerator for at least 1 hour.
The longer you let the meat marinate, the more intense the flavor will be.
Step 4:
Cook the marinated chicken skewers in a pan or on the grill until fully cooked, then serve.
If the oil separates after some time, you can shake or stir the marinade again before using it.
The grill marinade will keep in the refrigerator for about 2 weeks.
