You will need
Grater, strainer, garlic press, kitchen towel
Ingredients for the tzatziki
For 8 servings, 1 serving = 50 g (0 g of sugar)
1 cucumber
1.5 tsp salt
2 garlic cloves
1.5 tbsp lemon juice
400 g Greek yogurt
A pinch of pepper
For the garniture
1 tsp olive oil
Black cumin seeds
Preparation
Step 1:
Peel 1 cucumber, coarsely grate it using a box grater, and transfer it to a fine sieve.
Step 2:
Sprinkle 1 tsp of salt over the grated cucumber, mix well, and let it sit for 10 minutes.
Step 3:
In the meantime, crush 2 cloves of garlic and mix them with 1 tbsp of lemon juice, 400 g of Greek yogurt, ½ tsp of salt, and a little pepper.
Step 4:
Using a clean kitchen towel, firmly squeeze the salted cucumber to remove excess liquid, then add it to the yogurt mixture.
Step 5:
Season the tzatziki to taste, drizzle it with 1 tsp of olive oil, garnish with nigella seeds, and serve.
We recommend serving the tzatziki with fresh flatbread and olives.
Transfer the tzatziki to an airtight container. Stored in the refrigerator, the tzatziki will keep for 3–4 days.
