You will need
Bowl, pot, pan, food processor
Ingredients for the vegan mini meatballs
For 2 servings, 1 serving = 5 meatballs (0 g of sugar)
1 small onion
1 garlic clove
1 tsp canola oil
50 g green spelt
200 ml water
½ tsp vegetable broth
40 g rolled oats
2 tbsp whole wheat flour
40 g tomato paste
5 g frozen parsley
½ tsp salt
½ tsp sweet paprika
Some pepper

Preparation
Step 1:
Add 50 g of green spelt to a food processor and grind for about 1 minute.
Step 2:
Add 40 g of rolled oats to a food processor and chop for about 10 seconds.
Step 3:
Finely dice 1 onion and 1 garlic clove and sauté with 1 tsp of canola oil in a pan for 2 minutes.
Step 4:
Add 50 g of ground green spelt, 200 ml of water, and ½ tsp of vegetable broth and cook for 15 minutes, stirring occasionally. Transfer to a bowl.
Step 5:
Mix in the chopped oats, 2 tbsp of whole wheat flour, 40 g of tomato paste, 5 g of parsley, ½ tsp of salt, ½ tsp of sweet paprika, and some pepper, and knead with your hands.
Step 6:
Shape 10 small balls from the green spelt mixture and flatten them with the palm of your hand.
Step 7:
Add 1 tbsp of canola oil to a large pan and pan-fry the green spelt balls on both sides for about 5 minutes.
Step 8:
Transfer the vegan mini meatballs to a bowl and serve.
