Ingredients for the Piña Colada ice cream
For 4 servings, 1 serving = 100 g (7 g of sugar)
200 g cottage cheese
150 g canned pineapple
20 ml coconut milk
1 tsp cinnamon
10 g vanilla sugar (without added flavors)
20 g coconut flakes
For the garniture
10 g coconut flakes
If this recipe is not sweet enough for you, feel free to add more vanilla sugar. Just remember to track the amount.
Preparation
Step 1:
Add 200 g of cottage cheese, 150 g of canned pineapple, 20 ml of coconut milk, 1 tsp of cinnamon, 10 g of vanilla sugar, and 20 g of coconut flakes to a food processor. Blend until smooth and creamy.
Step 2:
Transfer the ice cream mixture to a freezer-safe container and place it in the freezer for 30 minutes to chill. Then, use an ice cream scoop to portion into scoops and serve in an ice cream cone or bowl. Garnish with 10 g of coconut flakes.
The ice cream can be stored in the freezer. Before serving, take it out about 1 hour in advance and let it thaw in the refrigerator.
