You will need
Pot, grater, lemon squeezer, food blender or food processor, 1 small glass
Ingredients for the kiwi chia spread
For 1 glass (approximately 300 g), 1 serving = 30 g (2 g of sugar)
375 g ripe kiwi
1 organic lime
10 g chia seeds
20 g sugar
If this recipe is not sweet enough for you, feel free to add more sugar. Just remember to track the amount.
Preparation
Step 1:
Peel 375 g of kiwi, cut into small pieces, and warm in a small pot over medium heat until liquid is released.
Step 2:
Wash 1 organic lime with hot water, finely grate the zest, and juice it using a lemon squeezer.
Step 3:
Add 1 tsp of lime zest, 1 tbsp of lime juice, and 20 g of sugar, then simmer for 2 minutes.
Step 4:
Remove the kiwi mixture from the heat, let it cool briefly, then puree it with a food blender so it’s still slightly chunky. Return it to the heat.
Step 5:
Add 10 g of chia seeds and simmer over low heat for 10 minutes, stirring occasionally.
Step 6:
Transfer the kiwi chia spread to a clean small glas.
The chia seeds will continue to swell, and the spread will thicken further as it cools.
Use a tall container for blending. If you prefer a smoother kiwi chia spread, simply blend it a bit longer.
Well sealed, the kiwi chia spread will keep for about 7 days in the refrigerator.
