You will need
Large pot, small pot
Ingredients for the coconut popcorn
For 2 servings, 1 serving = 90 g popcorn (8 g of sugar)
15 g agave syrup
20 g coconut milk
2 tbsp shredded coconut
15 g coconut oil
100 g corn kernels
If this recipe is not sweet enough for you, feel free to add more agave syrup.
Just remember to track the amount.
Preparation
Step 1:
Place 15 g of agave syrup, 20 g of coconut milk, and 2 tbsp of shredded coconut in a small pot and simmer for 5 minutes until creamy.
Step 2:
Melt 15 g of coconut oil in a large pot over medium heat. Add 100 g of corn kernels, cover, and pop over medium heat. As soon as the first kernel pops, reduce the heat and wait until all the kernels have popped.
Cover the pot and shake it frequently to prevent the popcorn from burning.
Step 3:
As soon as the popcorn stops popping, remove the pot from the heat.
While the popcorn is still hot, add the sweet coconut dressing and mix well.
Enjoy the coconut popcorn while watching your favorite movie.
