You will need
Pot, funnel, strainer, bottle
Ingredients for the chai syrup
For 400 ml, 1 serving = 40 ml (3 g of sugar)
15 g ginger
3 cinnamon sticks
3 tsp cloves
1½ tsp whole peppercorns
6 star anise
3 tsp whole cardamom pods
2 tsp nutmeg
3 tbsp maple syrup
600 ml water
4 tsp black tea
If this recipe is not sweet enough for you, feel free to add more maple syrup.
Just remember to track the amount.
Preparation
Step 1:
Slice 15 g of ginger thinly and add it to a pot with 3 cinnamon sticks, 3 tsp of whole cloves, 1½ tsp of whole peppercorns, 6 star anise, 3 tsp of whole cardamom, and 2 tsp of nutmeg. Roast briefly over medium heat without oil.
Step 2:
Add 3 tbsp of maple syrup and heat briefly.
Step 3:
Deglaze with 600 ml of water, add 4 tsp of black tea, bring briefly to a boil, and let simmer covered over low heat for 20 minutes.
Step 4:
Strain the hot chai syrup into a bottle.
Use a funnel for this.
When stored in a sealed bottle in the refrigerator, the chai syrup keeps for several weeks.
