You will need
High measuring cup, food processor, 2 bowls, hand mixer with dough hook attachments, tart tin (approximately 27 cm), rolling pin, brush
Ingredients for the apple pie
For 12 servings, 1 serving = 1 piece of cake (8 g of sugar)
For the dough
80 g apricots, dried
Water
165 g butter + a little for the tin
20 g sugar
1 egg
270 g wheat flour, type 405 + a little for the tin and for rolling out
1 tsp cinnamon
For the filling
1 kg apples
2 tbsp lemon juice
90 ml apple juice
70 g brown sugar
3 tbsp cornstarch
3 tsp cinnamon
70 g raisins
1 tbsp milk

Preparation
Step 1:
Place 80 g of dried apricots in a bowl or measuring cup. Pour hot water over them and let them sit for 15 minutes.

Step 2:
Drain the apricots and reserve the water. Puree the apricots and add enough of the reserved apricot water to reach the consistency of a plum jam. Place the finished apricot puree in the refrigerator to cool.

Step 3:
Using a brush, grease a tart tin with butter and dust it with flour.
In a bowl, combine 165 g of butter, the cooled apricot puree, 20 g of sugar, 1 egg, 270 g of flour, and 1 tsp of cinnamon. Use the dough hooks of a hand mixer to blend the ingredients into a crumbly dough.

Step 4:
Shape the dough into a ball with your hands and wrap it in cling film. Let it rest in the refrigerator for 30 minutes.

Step 5:
Peel, core, and dice 1 kg of apples. Place them in a bowl and mix with 2 tbsp of lemon juice, 90 ml of apple juice, 70 g of brown sugar, 3 tbsp of cornstarch, and 3 tsp of cinnamon. Finally, fold in 70 g of raisins.

Step 6:
Preheat the oven to 200°C.
Remove the dough from the refrigerator and divide it into two equal parts. Roll out the first part on a floured surface to about 0.5 cm thick and line the bottom of the tart tin with it.

Step 7:
Spread the apple mixture evenly over the pastry base.

Step 8:
Roll out the second half of the dough on a floured surface and cut it into strips about 1 cm wide. Arrange the strips in a lattice pattern on top of the pie and gently press the edges. Brush the dough strips with 1 tbsp of milk using a brush.

Step 9:
Place the pie on the lowest rack in the preheated oven and bake at 200°C for 10 minutes. Reduce the oven temperature to 180°C and continue baking on the middle rack for an additional 40 minutes until golden brown.

The apple pie is best served warm. If desired, you can add a scoop of vanilla ice cream, whipped cream, or vanilla sauce. Just remember to keep track of the sugar content.
