You will need
Casserole dish (about 18 x 12 cm), 2 mixing bowls, food blender, mixing cup or bowl, baking tray, kitchen scale, hand mixer with dough hook attachments, vegetable peeler
Ingredients for the apple crumble
For 3 servings, 1 serving = 1/3 casserole dish = 130 g (0 g of sugar)
For the date paste
50 g dates
water
For the crumble
50 g ground almonds
40 g wheat flour type 405
40 g rolled oats, fine
15 g rolled oats, thick
1 tsp cinnamon
1 pinch salt
25 g canola oil
For the apples
2 apples
1 tbsp apple juice or water
1 tbsp cornstarch
1 tsp cinnamon
Optional: nuts, raisins
If this recipe is not sweet enough for you, you can use more dates. If this recipe is too sweet for you, you can of course reduce the amount of dates.
To make the date paste extra creamy, soak the dates overnight.
Preparation
Step 1:
For the date paste, place 50 g of dates in a bowl or mixing cup and cover with cold water. Let soak overnight in the refrigerator.
Pour 50 g of dates with boiling water and let stand for 20 minutes.
Step 2:
Drain the dates and reserve the soaking water. Puree the dates and add enough of the date water to reach the consistency of plum jam. Set the finished date paste aside.
Step 3:
Preheat the oven to 180°C.
For the crumble dough, mix 50 g of ground almonds, 40 g of wheat flour type 405, 40 g of rolled oats, fine, 15 g of rolled oats, thick, 1 tsp of cinnamon, and a pinch of salt in a bowl.
Step 4:
Add 25 g of canola oil and the date paste, and use the dough hooks of a hand mixer to work into a crumbly dough.
Step 5:
Peel, core, and dice 2 apples into small cubes. Place them in a separate bowl and mix with 1 tbsp of apple juice or water, 1 tbsp of cornstarch, and 1 tsp of cinnamon.
You can optionally add some nuts or raisins.
Step 6:
Spread the apple pieces in a casserole dish and sprinkle the crumble on top. Bake in a preheated oven at 180°C for about 15–20 minutes until golden brown.
The apple crumble tastes best when served warm. You can optionally add a scoop of vanilla ice cream, some whipped cream, or vanilla sauce. Just remember to track the amount of sugar.
