You will need:
Hand mixer with dough hook, cling film, baking tray, baking paper
Ingredients for parmesan cookies
For 40 cookies, 1 serving = 3 cookies (0 g of sugar)
350 g wheat flour type 405
1 tsp baking powder
1 tsp salt
100 g Parmesan cheese, grated
150 g butter, soft
50 ml milk
1 egg
For the final touch:
1 egg
some sesame seeds, pumpkin seeds, caraway seeds, poppy seeds for decoration
Preparation
Step 1:
Mix 350 g wheat flour, 1 tsp baking powder and 1 tsp salt in a bowl.
Step 2:
Add 100 g of grated Parmesan cheese, 150 g of soft butter, 50 ml of milk and 1 egg and mix all the ingredients with a hand mixer with dough hook. Then knead all the ingredients into a smooth dough.
Form the dough into a roll about 3 cm thick. Wrap it in plastic wrap and let it rest in the refrigerator for about 2 hours.
Step 3:
Preheat the oven to 180 degrees convection.
Remove the dough roll from the refrigerator and cut into thumb-thick slices with a sharp knife. Place the parmesan cookies on a baking tray lined with baking paper.
Step 4:
Whisk 1 egg and brush the cookies with it. Now sprinkle the parmesan cookies with sesame seeds, pumpkin seeds or poppy seeds as desired and bake in the oven for about 8 minutes at 180 degrees convection until golden brown.
Packed airtight, the Parmesan cookies will keep for about a week.
